2 cups  

  long grain or jasmine 
3 tablespoons   baking powder
cup   sugar
teaspoon   salt
1 piece   coconut
clean banana leaves

            Grind long grain or jasmine rice into a flour consistency (You can use a rice grinder or a blender or a processor). Extract 1 cup of coconut milk from shredded coconut meat (you can also use a blender to do this). Mix all dry ingredients - ground rice, baking powder, sugar and salt. Slowly blend the coconut milk with the mixed dry ingredients. Stir thoroughly into a thick  smooth liquid mix.

            With the  muffin pan line with soften banana leaves shaped to conformed the pan shape., scoop 5 spoonful of the mixture into the pan. Heat oven to broil temperature, or 500 degree F then bake for 15 to 20 minutes until the top is brown

Americanized Ingredients:
2 lbs regular rice flour  (no wheat flour just pure rice
 flour you can buy at Asian store)
1-1/2 cups (1-14 fl ozs can) of coconut milk (you can buy at
 Asian store in a can)
3/4 cup confectioner sugar
2 tablespoon baking soda (calumet)
1/4 salt
Vanilla for flavoring
strips of cheddar cheese
Banana leaves  you can also buy a any Asian store
(Banana leaves will give distinct flavor and smell)

Instructions: Mix all ingredients to a thick liquid smooth consistency in plastic container or bowl.   Pour into a big muffin pan (2- 6" dia. 2" thick of mix)  lined with banana leaves   Heat  oven to 420 degree Fahrenheit. Put 4 strips of cheese on top  bake for 15 to 20 minutes until done. Good for 6 people. Double wax paper can be substituted for banana leaves. Must be lined to minimize burning on the sides.
